Here's something creative that will be appreciated and you will have fun doing:
Make up a crossword puzzle and have all the hints be personal inside moments and jokes that only you two would know about. Put it on a poster board and add some clipart and some pictures to it!
The crossword puzzle could be time consuming and a bit frustrating ... you could do the same idea with a WORDSEARCH or WORDFIND puzzle.
Put your computer skills to work! Use Excel, get clipart from Yahoo Images Search, copy them, and reformat them, use a gluestick to put on posterboard.
If you'd rather not use the computer so much, try graph paper to sketch out the puzzle and use real pictures or pictures from magazines.

Hand her a hand made card that is a Credit Card for a Free Day Off with seven refills.
Give her Valentines Day for free and send her to the spa. Then, whenever she is feeling stressed throughout the rest of the year, remind her she has those free days remaining. She can pull out that card, think how great you are while leaving the house and your relationship will flourish because of a simple gesture that showed her you cared and understand.

Since she's got everything, maybe you can take her out for a romantic dinner. A dinner in some park's restaurant, in a cable-car, or in the Night Safari, etc.
Something that you both had though of doing but had never got the chance to would also be a good gift for her. Like going to cruises, got to the zoo, bird park, a concert or play, etc.
I personally would like to have dinner in the cable-car for a change.

On another question similar to this someone suggested putting hearts all over the walls when she's asleep.
Breakfast in bed.
A day off from all chores and just spent together.
Big cuddly toy
You may not have enough time but there are shops where you can give them a photo and they will put that photo on a plate, jigsaw, bag, mug etc. You could choose a wedding photo maybe.
