As far as what to go into--that depends on your passions. What really interests you? The demand for nurses will be high for the next couple of decades. You can make really good money in that field, if you have a passion for caring for others.
A person with a general business degree is also pretty employable. Figure out what stirs your soul, and then figure out how to make a career out of that. This is an exciting time for you!
I would start slowly at a local community college. Allow yourself a semester with just a class or two to get back into the rhythm of school and notes and test and classes. Many community colleges have night classes where you can sneak away after the kids are in bed...or online classes, where you can take the class from your own home...
Most community colleges also have programs to assist with childcare while in school and financial aid to make it easier to swing tuition payments.

Check into your local community college. They offer night and online courses and special programs for people wanting to continue their education like you. If going during the day is better some colleges even offer a daycare.

once youn get money start taking classes
you can always finnish all of your basics and then transfer into a university
if you are married you do not have to move into a dorm at almost all colleges in the US so you could be with your family.
