The most important reason was that this was the first contact between Arab and Christian societies. Each learned from one another and took in new arts and sciences (Europeans learned to use digits like 1, 2, 3... for instance). Sociologists call this phenomenon "cultural efflorescence," and it is a valuable step in keeping a society lively and productive.

Prior to the Crusades, Islam was not a very centralized religion. Though there was a Caliph who was the head of worldwide Islam, most Muslim tribes were essentially independent; after the Europeans attacked, the tribes banded together and became much more solidly unified as a simple survival tool.

The Crusades changed the role of the Pope in Christianity. No more was the Pope a beatific religious leader; from that time the Pope became a world leader, essentially a king, with the ability to levy taxes and raise armies. The Pope became intimately involved in Italian politics, and European politics more generally.
