different stores get shipments on different days. there is no one specific day when stores will be "restocked"
what happens is that the wiis get shipped in large quantities to warehouses. they then get packed up and sent [by UPS] to many, many stores.
some stores receive small quantities on these shipments, the days of which are random.
for example: the nintendo store in new york gets like 20 Wiis per shipment, and gets about 12-13 shipments a week. pretty much twice a day. other stores, like the sears i work at, we get about 2-4 wiis every two weeks.
the best you can do is call everyday and see if the stores in your area have one. if they do, get there fast (or buy it over the phone via credit card, which some stores let you do)

No. This is not telling of when other stores will get the Wii in stock or if it will be restocked.
This date is set by GameStop for when they know they will have stock to ship to people. What GameStop appears to do is hold back on releasing stock, take preorders, then ship all at once.
I run the site listed below, and I have been monitoring the inventories of all of the stores for quite some time now. There is no real rhyme or reason as to when the next big shipment will be other than rumors from store workers. In the past few days, there have been Wii's in stock at a variety of online sites including Amazon, Sears, Buy.com, and Frys.
To find a Wii locally, just review the ads that come out in the Sunday paper. Ads are made custom to your area. So not every area will be getting stock even if someone in another city has an ad that says they will be having them. Best case senario is to buy the paper Saturday evening, review the ads, and then get ready to go out to the stores early if you see them in the ads!
Or, just buy it online and save yourself the hassle of running around looking.

Most stores don't have specific dates that they recieve shipments. As the answerer above stated, Nintendo ships to distribution centers and these centers in turn ship to individual stores. The particular store that I work at in South New Jersey receives a shipment of 2-4 Wiis once a week. The days depend. But you have to get there fast. At my store, customers will wait outside for the UPS driver to show up for a delivery then will follow the driver into the store and buy the Wiis as they come out of the box.
