The orchid I had died but then at the top of the stem where the flower died it started to grow leaves again. I cut it off and planted it in some orchid mixture I purchased and now another set of leaves has grown again. Any ideas? The one I planted is still alive and has those root looking shoots growing out of it all over, but does not seem to be doing too much more. There is no sign of a stem coming out of the leaves.

What it sounds like to me is a keiki (a vegetative method of reproduction commonly found in phalaenopsis orchids). Please take a look at the link to see if that is what you are dealing with.

I do know some things about orchids. Where do you live N/E/S/W?
I live down south and keep my orchid plant outside. It is not
in a pot but more a part of a palm tree. It is a white cattalaya.
The plant hangs out in the sun and I water it every other day.
It blooms around April and each year it has another bloom.
I am up to 21 now. The plant is about 23 years old. Maybe more.
I have it for 22 years. It takes little care, the less you worry about it
the better it seems to be. I do take it inside if it is going to get
cold here in Florida. I feed it about a month before it is to bloom.
Remember they live in the tropics usually just attached to trees
like air plants. They can live longer than humans.The plant itself is not a pretty sight but the flower it produces is absolutely beautiful.
Your plants are alive just let them grow. If you put them in a pot
they need no soil just nuggets especially for orchids. Keep the nugets moist by putting the pots in water once a week. As it grows put it in water more often.

Patience.
I have one by a window that gets moderate sun (in the house, I kept it in the same pot it came in), I did not buy any fancy dirt or whatever. I water it once a week only (I put a whole cup into mine, so it is covered with water), turning the pot about a quarterturn, and it is about to bloom again (the 4rth time in about 3 years). Once it starts, it takes a couple of months for the buds to get moving. But once they open, they also stay beautiful for a couple of weeks!

Grow it in a shaded area. Use a good draining soil, and don't over-water.
