I wouldn't use bamboo personally. If for no other reason that it is rough (especially when wet) and would possibly hurt the fish if he rubbed against it.
I would suggest soft floating plants that the fish can eat a bite of from time to time. Floating plants also offer a bit of cover that bettas really like.

The "bamboo" that is sold in stores ("Lucky Bamboo") is neither bamboo nor an aquatic plant: http://en.wikipedia.org/wiki/Dracaena_sanderiana

In the second website, there are a number of true aquatics that would be more suitable with a betta. Take note of the lighting and pH requirements, and match these against your tank will provide. Since bettas are surface breathers, it would be best to get a plant that didn't have floating leaves. Small floating plants (duckweed) would be okay, and would be a place for him to build a bubble nest. Any plants sold in pet stores are good. And,yes, abamboo plant will do fine,and so will your betta. The plant will use the nutrients from the waste the fish gives off. Plants that do not have to be planted,like floating plants are good for bettas

i have java fern, java moss, anubias nana, anubias lanceolata, some cryptocoryne in my bettas. they grow easily in low light tanks. all but the cyrpts do better without being planted even so that is a big plus. you tie them to rocks or wood and drop em in.
lucky bamboo is not bamboo. it is a dracaena which is a popular houseplant when not cut up to look like bamboo. beware of houseplants that they sell as aquarium plants. most will tolerate living underwater but won't grow and will eventually mold and die. you don't want to introduce mold to your tank or it will look like the tanks at walmart. i got some fake lucky bamboo at petsmart.
