OK, I'm going reeally against the other answerers in saying this, but its a fairly obscure song from his days with Sun Recordings called 'Blue train'. It is the best display of the 'Johnny Cash sound' out there, a really good beat!
His Sun Recordings were the best for sound, and you could have picked anything. Another of my favourites, although for different reasons, is the emotional "You're the nearest thing to heaven".

Get Rythm is the best! Its snappy and up beat unlike most of his songs.
Cocaine Blues, Drive On, and I Won't Back Down are other great ones

One of the last songs he did -'Hurt'. The song -and the video with it-gives me chills everytime I hear it. What a song.
