If you allow kibitz it means anyone sitting at your table watching the game (not seated and playing) is able to view all the cards in your hand.
It is useful if you are teaching someone how to play.
When somebody comes to the table and kibitzes your hand you will get a message to say they are kibitzing. To stop them from seeing your hand unselect the allow kibitz box.

I remember looking this up a couple years ago and I believe if you allow "kibitz" you allow other people, who are not playing, to watch the game without seeing the player's hands.
