It is because most people would assume the sentence would be 'if WAS you' because the verb (were) is following the first person (I) and to say 'I were' would usually be incorrect. It is the conditional tense implied by the 'if' that changes the verb 'to be' into the conditional tense resulting in 'were' not 'was'. reassure them that a lot of native English speakers get confused by this too! I'm not sure about this bit of the info but I am led to believe that not many other languages have words like 'if' with an imaginary tense that automatically trigger a specific tense.

this is a relatively high level construction with the "If" being used at the front of the sentence to show there is a condition when something might happen but the condition that is used is you placing yourself into their situation. the sentence does not include a easily recognisable set of circumstances for them to work out what the meaning of the sentence is
