You only need to grab one of the flags. Make sure everyone puts both of their's back on before you start a new play. If you are practicing for real football -- or just want to show everyone up -- try getting both.
Some times you may want to get both in case the player tries to say you really didn't get him.

Grab one. It's quicker and faster. It's also easier to grab than rather using both of your hands to get two flags.

Depends on the rules - usually one is sufficient. But in some cases, especially if the game is anticipated training for actual football, they'll require you to grab both.

just grab one but if you wanna get fancy or show them up then grab both but one is considered a "tackle".
