Peas were easy to get, easy to grow, and easy to keep large numbers of them in a small space. Peas have a relatively short life cycle and produce many offspring.

More importantly, peas had seven traits that were easy to observe, each trait occurring in only two forms. (Example: tall and short, purple flowers and white flowers, yellow seeds and green seeds, ...)

They were easily available, growing in his monastry garden. Also, they grow quickly so he didn't have to wait for years to see the results of every generation. Also, peas have different characters which Mendel could easily interpret as dominant/recessive, such as green vs yellow, tall vs short, etc.
