Make sure the teacher has left you attendance sheets and lesson plans for the day/week. You establish YOUR level of tolerance. Don't let more than one leave the classroom at a time (They will pull the whole "gotta go to the bathroom, locker, phone" trick on you)... tell them they have to wait until the last guy gets back... Don't yell. Yelling only makes you look like a child to them and they will lose respect for you. Know who you can call just in case one or more of them get out of hand... Stay on task... don't bury your head in a book or knitting... get up, walk around, make sure they are working.
Many kids will ask "Is this due at the end of class?" Even if the teacher has said they can turn it in tomorrow, tell them that you expect them to work on it in class... and if they choose to put it in their book and procrastinate, it WILL be due at the end of class.
Also... many of them will pull the whole "But our teacher lets us do....." Tell them that you are in charge today... if you do something different, it is because you are not their regular teacher... and if they have a problem with that, they can take it up with him/her when they return!!

In general, 11th graders are pretty mature. Many of them can drive and have jobs, so they have learned some responsibility. Above all, do not talk down to them. If you do, they will tune you out. Mostly, treat them like adults. Tell them your expectations and hold them responsible for meeting them.
