Make a nice Pasta dish with some cut up chicken or seafood. Heres some recipes, Good Luck!
Linguine Pescadoro
INGREDIENTS
1 (16 ounce) package linguini pasta
3 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon Italian seasoning
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can black olives, drained
1 (10 ounce) can (10 ounce) can whole baby clams
1 (6.5 ounce) can minced clams, with juice
1/4 pound small salad shrimp
1/4 pound scallops
2 1/2 teaspoons lemon zest
salt to taste
ground black pepper to taste
DIRECTIONS
In a large pot of boiling salted water cook linguini until al dente. Drain.
Meanwhile, in a heavy saucepan over medium heat saute garlic in olive oil until garlic softens. Add Italian seasoning, thyme, crushed red pepper flakes, crushed tomatoes, black olives, and the juice from both cans of clams. Simmer for 15 minutes. Mix in canned clams, shrimp, scallops, lemon zest, and salt and pepper to taste. Simmer for an additional 15 minutes or until shrimp and clams are cooked.
Toss cooked and drained linguine pasta over seafood sauce. Serve warm.
Fig and Lemon Chicken
INGREDIENTS
1 lemon, juiced
1/4 cup brown sugar
1/4 cup white vinegar
1/4 cup water
1 1/2 pounds dried figs
1 lemon, sliced
12 chicken thighs
salt to taste
1 tablespoon chopped fresh parsley
1 teaspoon dried parsley
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a small bowl, combine lemon juice, brown sugar, vinegar and water; set aside.
Place figs and lemon slices in the bottom of an 11x16 inch baking/roasting dish. Arrange chicken thighs on top, then pour vinegar mixture over chicken. Finally, sprinkle with salt and dried parsley to taste.
Bake/roast at 400 degrees F (200 degrees C) for 50 minutes, basting frequently (turn figs if they begin to brown).
With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter. Skim fat from cooking juices, then pour over chicken as sauce. Garnish with fresh parsley and serve.
Italian Chicken with Garlic and Lemon
INGREDIENTS
15 chicken thighs
8 large potatoes, peeled and quartered
1 quart vegetable oil for frying
1/2 cup wine vinegar
5 lemons, juiced
10 cloves crushed garlic
2 tablespoons dried oregano
2 tablespoons dried parsley
1 onion, minced
salt and pepper to taste
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C).
Arrange the chicken pieces in a 10x15 inch enameled roasting pan. In a large skillet over medium high heat, fry the potatoes in 1/2 inch deep oil until golden brown, then put them in the pan with the chicken.
Combine the vinegar, lemon juice, garlic, oregano, parsley, onion, salt and pepper with the 1/2 cup reserved frying oil and pour this mixture over the chicken and potatoes.
Bake in the preheated oven for 1 1/4 hours, basting the chicken and potatoes with the sauce mixture. Let rest for 5 minutes and serve hot.
OR if you wanna cheat, you can call and have a restaurant deliver or you can order and pick up a meal.

I would cook her favorite meal.
I think the ambience is more important than the meal choice. Set the mood with lots of candles and fresh flowers for the table. Put her favorite music on the playlist on your ipod.
But, if you are looking for something easy, try a pasta with a home made sauce or mexican stir fry.
Have fun. You are a good boyfriend. Mine would never do this. haha.

My boyfriend did a very nice little Chicken Parmesan dish and it didn't seem too bad... You could also do spaghetti and then go buy a fresh bag of already made salad, and pick out a nice wine, light some candles and set the table.

Stir Fry my man Stir Fry. Two Candles and a really good bottle of wine. You saving money on dinner so spend a little more on the wine. That is of course you are old enough to drink wine.
You should also find out if she has any like and dislikes when it comes to food.

Spaghetti is easy and almost everybody loves it. Get a bag of salad and some garlic toast to go with it. Don't forget a candle-lit table.

Well, there is a website called all recipies. www.allrecipies.com.
They have the best recipies to anything you need. My boyfriend loves apple pies so I went on there and found a great recipie for apple crisp. Its really easy and tastes great.
They have good recipies for chicken meals.
oh! and candles always help making things romatic!

try for main meal ..easy i`d say,,a pack of potatoes which have butter and herbs in ,a pack of steam veg`s ,,birds eye do some, and a piece of salmon (steamed) for starters ,,a carrot and corriander soup ,,in fridge normally in supermarket,, and desert well so many to choose from ,,something light tho ,,like a meringue,? or cheesecake,, hope this helps,, easy cook meal and can look good on a plate..good luck..
