Great choice, my first nile cruise was 15 years ago and I go at least once a year. I am in love :)
Anyway, enough about me. I tried many boats and I can tell you the best one is called the Nile Romance. It is clean, comfortable, great food and the crew is amazingly helpful. I strongly recommend it as the best cruise experience.
I usually call them by phone, the sales team speaks english and i simply book. Rate is in the range of $80-100 per person/ night all inclusive, including food and all the tours, so it is not too expensive, they even arrange for an airport pick up and can reserve the plane tickets so they make life simple.

It's better to do it like that : you find a good travel agency I don't like to put names here. If you like to go before summer you better book the cruise and everything early. You can go to the south by flight to Luxor or Aswan to start. I recommend you go by (sleeping train) if you like to save money. It's comfortable but it takes about 9 hours. Better to start the cruise from Luxor and take the 7 days cruise to have time to enjoy and relax as there are many visits there. You have many choices for the category, but I advise the 4 deluxe cruise or 5 stars standard unless you can pay for the 5 deluxe. Price depends on the company and the cruise category, but I can tell you a price range between 50$ and 120 $ per person for 1 night. There are many very good Nile cruises. People who book a charter flights and group they can get like 50% lower price some times. If you can go after spring you may get about 40$ per person in a double cabin.
It's the dream tour I always say that. Enjoy it specially Aswan ..the Nile, the hand mades and the most important the kindest people in the world in Aswan.

If it's a small nile cruise, like a one hour thing along the nile in Cairo, then there is absolutely no need for a travel agent! Just take a "felouka" (which is a small boat, carries around 30 persons) from a place next to "Grand Hyatt" Hotel. No need to book in advance or anything, and will cost you no more than 100 pounds I guess.
If you mean a nile cruise that takes several days, like travelling from Cairo to Aswan or something like that, then yes, you should contact a travel agent.

about cruise in Egypt, it is all in the south, there are 2 areas to have sleeping nights cruise:-
1st between Luxor and Aswan. and in this area there are soo many nice and good boats.
2nd between Aswan and abu simble. just few good boats work there.
i don't know which one you intresting for, also there are avaliable of differant prices, so you can contact back then i can give you more info, like how many stars you prefer the boat, exact timimg for that trip, which things you would like to visit during the trip.

i have tried "beau soliel " before it is fantastic and cheap it wont cost u much
