For standards, there's the (now-discontinued) Suzuki GS500E and the Buell Blast. I have a GS500F (the later version, with a Gixxer-like fairing but the same ergonomics) and have no complaints other than that I'd like a more comfortable saddle for rides over an hour or so long.
For cruisers, the Kawasaki Vulcan 500 is a great choice. You can also sometimes find older Yamaha Virago 535s.
I'd recommend sitting on all of them and finding out which one fits you best.

The mid 80's Honda VT500 shadows are very, very reliable bikes. I just sold one that had 50K miles on it. The motor didn't have any hint of odd noises.
