I'm new at the anime stuff, but I just watched the entire Ranma 1/2 series and it was sooooo funny! The whole thing can be seen on gofish.com too. Now I'm watching Bubblegum Crisis, but I just started it so I can't really give you a review on that one yet.

I still watch Inuyasha and Cowboy Bebop (the team that made Samurai Champloo did this one before, and it's probably the most popular anime, i can't believe you haven't seen it, or maybe you forgot it)
I'm watching Bleach, Probably my favorite ever is FLCL.

"RahXephon" is a very good series. If you liked Evangelion, you may also enjoy this one.
"Scrapped Princess" is also good.
"Ai Mai Mi Strawberry Eggs" is a funny comedy.
"Mai Hime" and "Mai Otome" are also really good action comedy series..

iv heard and seen about half of those.... pretty good, but you should add bleach and death note and jigoku shoujo and code geass theyr pretty awsome too .
