They are all classics, for a good reason. They are all good books, well written, good stories, with something to say. That said, they are different, and which one you should read depends on what you like.
1. P&P is a great romance, and a great commentary on English social classes. It will tell you a lot about how people lived and chose their spouses at that time.
2. Frankenstein is arguably the first "horror" and "science fiction" novel. Also an unusual book for a woman to write, especially at the time. It has a lot to say about moralty, ethics, and personal responsibility.
3. Herriot is a very readable writer. Of all of your books listed, I'd say this is the easiest to read from a content and language point of view. They aren't old enough for the language or setting to be unfamiliar, but that also gives you less to comment on in an essay. Easiest to read, probably hardest to write about.
4. 1984 is a classic. It is a commentary on politics, the role of government, and an individual's responsibility to society. If you don't read it for this project, you should probably read it anyway. It is often referenced in other works, and you should know it as a cultural reference.
5. Jekyll/Hyde. Another period piece, but more a psychological commentary on people and their personalities in general. Another early horror/sci fi novel, and very unlike Steveson's other popular novels (Kidnapped and Treasure Island).
6. MOTOE: A classic detective novel. Christie is a good writer, but her style of mystery is very unlike those written today. Some information about life in that part of Europe at the time and geography, but probably the second hardest book on your list to write about.
Whatever you choose, go the library and get a few professional reviews or critical essays on the book you choose. I would also suggest reading an encyclopedia entry or some type of short author bio before you write your paper. It will help you with insight into the author's motivation for writing the paper, and their life experience that made them write what they did. Your instructor will be impressed. Neither of these two things are hard to find, and a librarian will be able to help you easily.
