If you're referring to iTunes, it depends on what you mean by "sync tab". To force your iPod to sync (assuming it either isn't set to auto-sync when plugged into your computer, or you've just changed something and want to resync it without popping the plug out and back in), after you've plugged it in, you can right click on the iPod's name in the left menu and select "sync" from the options. To change your sync settings, left click on the iPod's name to bring up the iPod settings window, and select from the various tabs at the top of the window to change settings for specific file types.
