Basically I work weekends part time, go to school full time pursuing 18 credit hours worth of 5 science and math classes and I'm raising a 3 year old son. I'm constantly exhausted even though I get my 7 or 8 hours of sleep.

My question is what can I do to get more energy to study and pay attention. are there health bars or vitamins I can take?

You probably need to take a look at your overall diet. Sugars and simple carbs can spike your blood sugar, making you feel drained and exhausted, yet reaching for more sweets to give you a boost. Cut them, and eat more protein. Protein (lean meat, fish, eggs, cottage cheese) is what gives you energy and makes you feel alert, so eat some with each meal.
A multi-vitamin is always good.

Health bars or pills aren't going to be as effective as eating a well-balanced diet (go to http://www.mypyramid.gov if you don't know exactly what "well balanced" means) and drinking enough water. You should be drinking a full gallon of water each day. Even if you get enough sleep at night you might be exhausted simply because you're doing too much. Could you drop 3 credits? I remember being exhausted the semester I took 18 credits and I didn't have a son to raise. What about sending him to a grandparent's house or a friend's house one night/week so you can just relax at home...take a bubble bath, watch a movie, or catch up on studying if you really have to.

Most of you being tired is the exhaustion of it all combined with stress. Vitamins and lots of water help. You may want to think about taking your son out for a long walk on a daily basis.
