There are two considerations that share top priority: Security and Usability.

Security should be inherent to the architecture of the application, from the client-side to the server-side. It should also be completely invisible to the PoS operator.

Usability can sometimes be a simple matter of putting extra time and effort into thinking about how your operators will actually use the system. Sometimes solving usability problems can be a tricky thing. The most important components of PoS usability are
- rapid response of the UI
- forgiving input modes (the interface should always do all of the extra work - a simple example is on websites, allowing people to enter their credit card number with spaces or dashes or no separator; allowing a date to be entered in pretty much any format; etc.
- business flow (the interface should read right to left, top to bottom and screen to screen in the order that particular business would naturally conduct the transaction).

I can go into this as deeply as you need (one of the hats I wear is UI expert for major multinational corps, and another is software architect, and I work at one of the largest banks in the world, so application security is a huge priority)... just message me if you have any questions or want to prototype some things.
