To win the bridge duel, you need a lot of timing and it takes practice.

What you have to do is to run at the enemy on Epona. As you start to get close, veer to the side so you go past him and slash at him as you go past. If you get it right, you will see a cut sequence where he falls off the bridge to his doom. Your sword may bounce off a shield though. If that happens, you'll have to try again/
