Because we want to say something, but are lost for words.

Or maybe (also) because we need an extra supply of oxygen due to the shock.

Shock mimics impending death to the central nervous system. For a split second, you stop breathing and your heart skips a beat... Just like when you sneeze. (Which is actually why the custom of saying "God Bless you." started because your heart stops...

When you experience shock, the same thing happens. If you look even closer, you take on a huge breath when the mouth opens to get things back to normal again... It is a compensating breath that gets the old ticker right again. Thats why when you get excited... people tell you to relax and BREATHE!

To allow a sharp intake of breath, which is necessary to stimulate the brain and heart as they are affected when severely shocked.

To gasp, maybe even to say something if the shock is not too great.

I don't open my mouth when I 'm shocked. I only see that in movies. Maybe what happened is that actors have done it so much in movies that people started copying them, and it has happened so often that we think it is psychological, but what the hell do I know maybe it is psychological.

Moving our face, hands etc. is a way of communicating and expression. It follows the same principle as the "eyebrow raise" when you see someone you know, it's a natural way of expressing your acknowledgement of that person.
