A hunter friend of mine stated a while back that if an hog runs alot while being hunted the taste of the meat is changed. The statemet may be true, but is there facts to proved it. and if so where do i find such facts.

Yes.

If you stress the pig out and it starts running lactic acid will start building up which will give a sour taste and will toughen up the meat. (lactic acid is a by-product of over exerting muscles and this is what causes muscle cramps.)

If you don't properly kill the pig and leave too much blood in it it can get an odd taste. This is why slotter houses and hunters hang up the fresh kill to drain.

Wow, thats a great question. I couldnt find anything about the way it is killed, only how it is cut, cooked, and even the temp that it was killed at, but nothing on how it was killed. I never thought about that but it is very interesting! I do love the taste of pork, I wonder if thats true!

how tough the meat is when cooked is how stressed the animal was at the time of death
