Ellis Island is a great site for a documentary. You have to play the reporter and ask questions to the museum public relation person who oversees Ellis Island. Also you are going to need exciting video clips. For example, when you are on the ferry going to Ellis Island, take video footage of Ellis Island as well as the neighboring Statue of Liberty. That was the view gets a feel how it was to be an immigrant arriving to this country. Then you should film the inside of the Ellis Island building. To get focus on your document, you should interview your classmates. That should be your stories plot. Interview your classmates and ask them when did their great grandparents or grandparents come over to this country. And asked them what nationalities their great grandparents were, and so on.
