You can look the person in the eye and just say his/her name with a nod and a pleasant smile. If it is an older person, you can substitute names with 'sir/madame/anything else that is relevant'.

If you are on the telephone just pick and say for instance "freda here" - you will get a response and I bet you follow onto say what you dont want to i.e. 'hello'. In person I always use 'Hi' to friends etc., it gets the response I want and to business etc., its Good Morning or Afternoon' again a different response received. On saying that I will close to you and all as Good Afternoon folks!

Try a different language - it may help with the ladies - Italian is always popular 'buongiorno' although Spanish 'hola' is easier to remember.

how about you not say anything. instead greet people with a fart. that should make for an interesting social experiment if you're bored.

Well, you can always try 'hi', 'good morning', 'good afternoon', 'good evening' if it really bores you.
