Most proteins exhist in the form alpha helix. Which would be like winding a string around a stick as it advanced foreward. Collagen (the protein contained in hair and finger and toe nails) is in the forn known as beta pleated sheets. They run parallel and regular bends perpendicular to the direction of elongation. This is because collagen contains a large amount of the amino acid proline which gives the protein strand a 90 degree bend wherever it is located.

There are many proteins of various sizes. Their properties vary. In general they can be digested by enzymes(which are proteins) into amino acids. They can be denatured by heat.(as in cooking an egg white)
