XP Pro has better networking & security features as well as support for multiprocessors (dual core, etc ...).
It also has better backup & recovery features.

The biggest difference off the top of my head with the two would be XP Pro is "networkable" meaning you could use it in a office environment on a domain. Also there are other perks with XP Pro such as "Backup" that XP Home doesn't include. The link I provided gives you all the differences on a side by side comparrison.

Pro edition includes some extra administrative tools and utilities for networking. Much of this can be added to the Home edition through a few downloads on Microsoft's website.

The link Philip T provided gives false information. Aside from #1, all of those features are available in XP Home Edition if you know where to look.

Windows XP Home edition is designed for home users and has very limited intial networking setup. Professional edition is designed for work and is preconfigured for networking and has more functionality for use with domains and such
