Because it looks cool. The effects that they use in movies are often extreme and unrealistic just to make them more interesting. Just like most cars explode in movies where very few do in real life

There is definitely no oxygen in space to produce sufficient pressure for anything to breath or burn. If your propulsion system needs oxygen, you have to take it with you.

Space ship burns only because of friction of air as it strikes with tremendous speed, Burning by friction need no Oxygen.

It is very possible....A spacecraft has lots of liquid and gaseous oxygen on board.
Oxygen is a powerful explosive if exposed to the right (or wrong) elements. Agree it would be a short explosion, but nonetheless a dynamic one.

Because if they made it explode the way it really would in space, people would think it was unrealistic. It's the same reason that explosions in space go "boom".
