Greece is not a cheap country anymore. The prices in Stalis are reasonable by Greek standards. In June 2004 I wrote an article about prices in Crete and a big part of my research was done in Stalis. The prices will be higher in summer 2007, but it can give you an indication of what to expect:

its defo reasonable our hotel was right in between malia and stalis last year and while malia is hectic and manic with well booze on tap 24-7 stalis is awesome for chilling out and kicking back with a cocktail or two real good and relaxing and at the same time there is plenty of drinks there, also its only 10euro in a taxi away!!!

we went to stalis a few years ago ,just after the euro came in and its about the same as all greece .lots of choice of where to eat and drink so lots of competition so the prices arent too bad .we ended up drinking cocktails most of the time as it seemed the cheapest .stayed in the irini apartments with kosmar which are attached to the mosquito bar ,toward the malia end of the beach road .

I stayed in Malia just outside Stalis & that was pretty reasonable
