I figure that's why it's set for 2 o'clock in the morning? What happens if you do?

If you try to draw water while the water softening unit is in the recycling mode, you will draw unfileterd, unsoftened, dirty water. The unit is cleaning itself, and therefore any water that is used during this process is not clean and should not be used for consumption. (Drinking, brushing teeth, cooking, etc.) The toilet may be flushed, but this will put added strain on the water softening unit, as it is in the cleaning mode. It is really best to wait until the recycling is complete before resuming water usage. Hope this helps.

If you use the water during the recharging cycle you will draw salt into your water lines. This should not hurt the pipes but you probably would not want to shower or cook with the salty water.

Good answer above. The water will not be softened. The water will also have a strange taste to it if consumed.
