It depends how heavily you butter the bread, the heavier side of an item will always land first :)

If you are sweeping it off from a table height, the distance to the ground is the same distance that the bread takes to flip 180 degrees. Sweep it off the top of a building, you get a different result. Drop it end on, and it is completely random.
