I tried messing with the "crossfade" option on iTunes, but I figure that is just for iTunes playback and wouldn't affect my iPod.

Is there any way to make my iPod play music back without any gaps?

Yes, but first you'll need to upgrade to iTunes 7 and get the corresponding upgrade firmware for your specific iPod model, if you have not already done so. Once you've done that, select all of the music in your library, right click on the highlighted text, and click Get Info. At the bottom of the pop-up window that appears, there is a check box for Gapless Album. Check that and click the OK button to close the pop-up. Sync your iPod to update the formatting on all of the tracks, and the next time you play music on it, instead of playing one song all the way through to the end and only then searching for the next track, it'll start search the next track about two seconds before the previous track ends and have it read to start up with no pause between tracks. This is particularly cool for listening to live albums, as you previously only had the choice of ripping the CD as a single track, or hearing a sudden and very noticable pop of silence over the sound of the audience cheering between every song.
