Do something romantic.
Take her for walk along the beach. Have a picnic. You prepare the food/drinks
Last thing you want is to sit in a dark resturant and wait 2 hours to be served.

What ever you do, listen to her and always agree, never argue. Oh and take her out to a place that is unique, not neccesarily expensive, just different, something that she can talk to her friends about (also known as one up her friends).

ask her to bring a friend around for a 3some for thte big day and then you wont HAVE to worry about satisfying her. also a good stratagy for when you don't want to buy a girl a present for her birthtday and (yes, i know) even christmas. good luck, my heart ripping friend.
