I have a deadline to submit 3 letters of reference to a company that has given me a job offer. I have to have these letters by Friday, and I've received two of the three letters I need.
How do I again remind the third provider of a reference (who is a professor) that I need the letter by Thursday? What should I say?

Nothing wrong w simply asking , in a polite way, if the person could complete the reference toady as you have a deadline for submission. Stress your appreciation, & apologize if necessary for appearing aggressive.

Worst case be thinking of an alternative source for that third reference. Good Luck!!

the reason she is calling for that is to save your company legally defensible. the recent company must have had a type so that you could signal contained in the equipment (or perhaps rapidly on the equipment) that states you're letting them contact former employers.
