Black olives come in a can because we actually cook them in the can. Olives go in, a brine or juice is added, cans are sealed and they then go into a continuous cooker. Glass simply can't hold up to the intensity of the cooking process.
Green olives are processed differently — they're pasteurized but not cooked, then put in jars with brine added.

Because green olives are considered more of a delicacy and are more expensive to both process, store and harvest. Regular old Black olives are more common and canning is a less expensive more practical way of storing them for shelf life and sales. Some do come in jar's. The expensive ones like calamata or the Greek, black, oil cured, olives come in jars too. Green olives are also for bar use, makes more sense to store them in a jar rather than a can for bar use.

Racial profiling. Funny. I like it. Well, segregating olives is the pits. I find it quite jarring in this day and age. But I will get over it. Olive to see another day. Can we allow this to happen. Shouldn't we blow the lid off this bigoted practice? I have a dream that some day all olives, no matter of their size or color will be packed in the same container. Some day the green olives won't be forced fed and stuffed like liver enlarged geese. Should Peto(people for the ethical treatment of olives) know about this?

Black olives are very light sensitive, they would wear sunglasses but people have complained to the manufacturers as they get caught in their teeth.
