There is a too wide range of poets and poetry. There are enormous classic poets in Spain like José de Espronceda, Francisco de Quevedo, Federico García Lorca, and very important poets in Latin America such as José Martí, Pablo Neruda, Amado Nervo, Alfonsina Storni, Gabriela Mistral, Mario Benedetti.... And an amazing but not very known Mexican: Manuel Acuña.

In terms of the most famous romatic poet it is Pablo Neruda, the best. If you search his name you will find countless websites with with his work.
On a side note, hispanic is not limited to "poeple form latin america". It means people that are/come from a spanish speaking country so if you search hispanic poets that will include poets from spain too.
