I think it switches year to year between AFC and NFC teams where the team designated the home team based on which conference's record gets to decide which uniforms to wear. The Steelers in Super Bowl XL wore white despite being the home team because they had won three road games in those uniforms and were believing in superstition. As was mentioned, the Cowboys wear white, and the Redskins have worn white jerseys as the home team.

Best record gets to be the home team. Home team gets their choice of Uniforms. Most teams wear their dark unis at home. Notable exceptions Cowboys wear white at home and on the road most of the time as well.
