Is it in the wash or dry cycle, or even both, that discolors whites?

It is usually the wash cycle that is responsible. Things that can happen:

fabric softener stain (use less or dilute to prevent)

dye stain from detergent (use clear or dilute to prevent)

minerals deposits from hard water (use vinegar in the wash)

soils from clothes get redistributed from the wash water (use
more water or fewer clothes to prevent, wash especially dirty clothes separately from "clean" dirty laundry)

colors bleed and redistribute through the wash water (wash new colors separately and let soak for at least one hour in salt water before laundering to set the dye, wash colors in cold)

washing in hot water can set stains, and if you have problems with the water heater, you may compound any mineral or sediment issues on top of the general water supply.

About the only problem related to staining in the dryer is if you actually burn your clothes, by drying them too hot. It may not be a big black char spot, but if it is just allover brownish color and smells a little burnt, turn your dryer down or have it serviced.

You can also get color bleeding in the dryer from improper sorting. Or if the clothes don't dry all the way and sit in there damp on different color garments. But this is not the fault of the machine...just set it to go longer next time.

Probably during the wash where colored clothes and whites have been mixed together.

Always wash colored sheets and towels separately for the first few washes to remove any excess dye. Same with new "blue" jeans, etc.

are you mixing colored in with whites? or using too much soap or putting too much in one load .?.or using water that is too hot. try using the second rince if you have it .and try a lower heat cycle for drying .
