Glass, more sterile.Wood's fine for breads and such.

I like a wooden surface to cut on, but I think plastic is more sanitary. This is just my thought, I really don't know. I'm afraid bacteria will get trapped in the wood grooves, so I never cut meat on my wooden board, just veggies.

I prefer wooden cutting boards... for some reason my plastic ones have always scratched up and I'm not real comfortable with the idea of eating plastic flakes!

i PREFER wooden as they are provided there own antibacterial qualities by nature -never put them in the dishwasher and treat them w/a food safe mineral oil frequently
the newer silicon/plastic boards have some of the same sanitary qualities, but can go into the dishwasher and clean up easier and don't stain
stay away from the old plastic style as they collect tiny microbes and never become "clean" after the first use -they are best for non-animal food products (veggies and fruits)

i know for a fact wooden ones are cleaner. the wood still fights bacteria even though its now a cutting board. plasitc cant do that . this is fact oh and dont use bleech on them boiling water is better
