if the pipe gets broken yes they can. PVC pipe is alot stronger at the joints than clay which is where roots usually enter at. Unless there is a break. If you are running a new sewer line and are trying to determine the best location a good guide is to look at any trees in the area. What you see up top, is what will be below. Basically turn the tree upside down and that's reasonably close to what the roots will be like.
If you do run a new line using pvc, make sure it is not a cellular core pvc pipe, this is a lighter weaker variety of pvc. I believe pvc pipe will have "ASTM 1665" printed on it.
Tree roots will search out a water source, the old clay sewers are famous for leaking this is why roots love them.

Roots seek water, so as long as the pipe is not cracked and all the joints are good you should not have a problem. 9 times out of 10 roots get in at the connection from the city to your hook up at the curb, (I've dug my share up) coincidentally where most trees are planted along the street and sidewalk. The old clay pipe and cast iron pipe are pourous and crack easy thats why they get roots in them. PVC is the way to go but some municipalities still make you put in cast iron underground, though there's not to many of them anymore. Thank God

Yep they did mine. As far as how far to plant a tree away from your PVC pipes will depend on the tree. I had a weeping willow tree planted way across the yard and the roots grew into my septic tank lines. What a mess!

How far depends on the trees root structure, but roots do penetrate PVC piping.

I personally don't know how far they should be planted. You should ask a landscaper or gardener that one. A root may not penetrate the pipe but, it will move it over time and cause it to break or rupture. Only my opinion.

PVC is not used for drain pipe. ABS is. Tree roots will penetrate at a joint if the joint is not sealed adequately.
