Edward Norton is one of the most talented and under-rated actors.
Haley Joel Osmet is a great young actor, no kid actor can compare with his performance in the 6th Sense. Unfortunately he hasn't had any good parts that live up to his potential.

That's a pretty broad question. It depends a lot on personal taste to some degree. There's drama, comedy, musicals. I guess for an all-rounder, I'd pick Tom Hanks!
