Well, I really don't know about a particular person, but I know that a lot of the famous southern dishes were actually foods that came from Africa. When the slaves were taken to the plantations, the remembered their cooking styles but had to substitute some vegetables and foods to create the semi-authentic dishes. Hence today we get delicious foods like gumbo, jambalaya...
