The null hypothesis must be the MOST conservative (e.g. DO NO HARM) way because what you are going to try and do is to find enough evidence to REJECT It.

For example let's say your null hypothesis is
"the patient is dead" ... how are you going to find evidence to prove that he is not dead?

... the more conservative approach is to say
"patient is alive until you can prove with a certain level of confidence" that he is not. ... then if you find enough evidence to show that he is not alive, then you can REJECT the null (and stop trying to revive him).
