what dagger has these symbols; the griffin and the dragon, a Celtic knot, two fish and a turquoise or jade in the middle of the sheathe? what do the symbols represent?

A Celtic knot represents infinity.
Two fish represents infinity as well.
Turquoise represents enlightenment.
Jade represents beauty.
The dragon can represent power, and so can the Griffin. They also have different meanings, depending on the culture. A dragon can mean wisdom or strength, a Griffin can represent mysticism and mysterious powers.

I have never heard of a dagger with all of these on them, but if you find it, let me know. I want one!

Sounds very gaudy and Hollywood. Excalibur had no griffin or fish. It had a dragon and a ruby on the sheath. It was also a hand-and-a-half sword which wasn't quite in it's time. Should have been a Roman short sword.
