Usually it is a "throwback" or third jersey that the home team wears. An example would the the Leafs. They wear their throwback/third at home, which is white.

Home teams in hockey used to wear white at home and a darker one on the road.
Since they were travelling they often weren't able to access facilities to clean their jerseys on the road. Darker coloured uniforms helped hide many stains.
Nowadays, All arenas have laundering, cleaning services available for the teams. The Home teams in the NHL a few years ago changed to dark uniforms at home and light ones on the road.
Sometimes teams will make a switch if some unforeseen occurance happens. Such as jerseys being delayed in transit, lost or stolen. Or even if the laundry for a visiting or home team didn't get done.
Sometimes it's just a throwback jersey to honour their team from a previous era.

Home teams always wore white until the 91-92 season when the NHL switched to dark at homw to celebrate the league's 75th anniversary. That boosted jersey sales and NHL revisited that strategy a few years back.
The 3rd jersey situation had also forced teams to travel with both sets of uniforms on some trips to accomodate host teams wearing 3rd jerseys (most 3rds are dark).
2 parts marketing, one part common sense. It's still retarded and the league should go back to traditional white at home.

The Leafs where there white (3rd jersey) at home only when they are playing an original 6 team. Other then that it’s blue at home for them.

All teams had 2 jerseys
One was light (home)
one was dark (away)
Now it's toss-up who's wearing what
Why they changed it I'll never know
But why they changed everything else in the game is also a mystery to me
They need to get back to the basics

It looks like next year the home team will wear white during division games. They may be going back to home whites and visiting colors for every game.

That seems to be the case in many other sports also like, Professional Basketball and Football for example.
I believe it's the home team's choice on which jerseys they wear and they traditionally choose white...but I have seen this not quite a hard and fast rule and broken on occasion.
How about this theory as to why home teams would select white (especially outdoor sports like Football, Soccer, etc).
...teams who let's say have early season home games in the south or a hot climate would want their visitor or opposing team to wear heat absorbing dark uniforms under the hot sun while the home team can choose wearing cooler, white, heat reflecting jerseys.

I never knew that, I thought that home was colour, away was white. Leafs wore blue yesterday, and they were at home. I've never noticed a "throwback" jersey worn at home.
