If I change my schedule for the 2nd semester do I have to write a letter to all the colleges I applied to?

Only if you think it will affect your chances of attending a particular school. The fact you are concerned suggests that your choice of schools and planned learning at the college level has changed. Normally, what you take in the last semester should not influence your admission unless you told them you were taking advanced calculus II and AP college physics and you now plan to take skin diving and basket weaving.
