Setting a bird's broken wing or take care of sick wildlife -- where I could go to learn to do that?

Without going to vetinary or vet tech school -- who has classes?

Contact your nearest wildlife rehabilitation center. Animal Control can probably tell you where they're at. They usually need volunteers.

Get in touch with something like the RSPCA like we have in Australia and volunteer your services in your spare time. I'm sure they would show you a few things along the way.
