Most medieval archetypes come to mind, such as the Knight on his warhorse, or one of the Riders of Rohan from LotR. Depending on the color of your horse, you could either do Gandalf on Shadowfax or one of the Ringwraiths on their black horses. It's a bit overdone, but you could do the Cowboy look as the Lone Ranger on Silver, or go fantasy again with equestrian costume prosthetics and do a Unicorn or a Pegasi. The Pegasi, esp. you could do Harry Hamlin from Clash of the Titans. If you want to do a little research, you could look up the gelatin formula they used in the Wizard of Oz for the Horse of a Different Color, and use it to dye your horse like a giant Easter Egg and wear a giant Easter rabbit costume. Or dye him green and go as Lucky from Lucky Charms. Or, with some effort, you could design a Borgified horse costume and go as one of the Borg from Star Trek. Dye him red and "paint" flames on him and go as a demon on a Nightmare, or even a Wild West Ghost Rider, which shouldn't pose a problem with the movie coming out there should be costumes available soon. Anything you can think of really, just as long as it doesn't present a danger such as a physical or visual impairment to your horse. Good Luck!
