The two that immediately pop to mind are semi-recent:
1. The 40 Year-Old Virgin
- Thought it was going to be along the lines of American Pie so I avoided watching it for a long time. Was bored one day, and was really pleasantly surprised, really original script, great cast, and all in all, a laugh-out-loud movie.
2. Zoolander
- Satires the whole fashion industry with cameos from real designers and celebrities alike. Crazy storyline, but really well done, loved this to pieces. I still find myself quoting it sometimes.

Coneheads, Jane Curtin and Dan Ackroyd, it completely destroys me. Caddyshack a special 2nd. la Cage Aux Folles, the two the unique French version & the English version with Robin Williams are exceedingly humorous too.

If you like parody movies, you should watch some films by Mel Brooks (esp. Spaceballs and Robin Hood: Men in Tights).
