Marble is basically calcium carbonate. If you put HCl or other acid on it, it will fizz and give off CO2(g).

Test with concentrated HCl. The CaCO3 (calcium carbonate) in the marble will react with the HCl and form bubbles of CO2. If it "fizzes" then the rock is made of marble.

CaCO3 + 2 HCl --> CaCl2 + H2O + CO2

One would be a hardness test, and to see if it is real, a little sulfuric acid drop in a hidden place. If it bubbles it is pure marble, if not, then it is a composite of marble dust and epoxy.
